Know the various colors and types of sugar

People never escape the consumption and use of sugar, especially in their daily diet. Sometimes the sugar, which is used to spice food or drinks, also needs to be considered. There are several types of sugar that are often found in different shapes and colors. According to Darwin (2013) there are several types of sugar that can be found, namely:


Sugar

Granulated sugar is sugar derived from sugar cane juice with a higher ICUMSA level compared to refined sugar, namely 200-300 IU. After crystallizing, sugarcane juice will crystallize and turn into pure white or slightly brownish white sugar grains (raw sugar). Granulated sugar also has several types such as coarse granulated sugar which has a larger and coarser texture, sugar cubes which look like cubes with a pure white color, icing sugar where this sugar has the smoothest texture, rock sugar which is a lump of sugar that resembles a white stones.

Brown sugar


Brown sugar comes from the main ingredient which is different from granulated sugar. Brown sugar is made from taped water from coconut tree flowers or coconut juice, often referred to as Javanese sugar. The texture is in the form of a cylindrical lump and is brown in color. Usually used in sweetening food and beverages by means of thin slices. Coconut brown sugar is sold in small form and has a yellow to brownish color with a distinctive aroma and taste of coconut sugar. The color of brown sugar varies from brownish yellow to dark brown. The color of brown sugar is influenced by several factors, namely the quality of the sap, the type and amount of sap preservative used and the cooking process (Haloho, 2015).

Palm sugar


Palm sugar has a shape, texture, color and taste similar to brown sugar. However, what distinguishes only the raw material. Palm sugar is made from sap water tapped by palm trees, a plant from the palm family. The process of making palm sugar is generally more natural, so that certain substances contained in it are not damaged and remain intact. Palm sugar is bigger in shape than coconut brown sugar, usually palm sugar is printed with a bowl mold made of wood or plastic. The weight of palm sugar can reach 1 kg and has a sharper aroma typical of palm sugar

Brown Sugar


Brown sugar is made from molasses, and the manufacturing process is slightly different from sugar, which is by mixing molasses to produce brownish colored sugar. Divided into 2 types of sugar, namely light or dark brown sugar. Light brown sugar is commonly used in baking, such as making butterscotch, condiments and glazes. Dark brown sugar is usually used to make gingerbread and additives for foods such as mincemeat, baked beans, and others.
