In general, the use of sugar can be divided into two, namely sugar for consumption and sugar for industry. Sugar for consumption is often known as White Crystal Sugar (GKP), while sugar for industrial needs is known as refined sugar.
Refined crystal sugar (GKR) is sugar that has a whiter color with a higher level of purity. In addition, refined sugar also has a smoother, cleaner texture than white crystal sugar. Refined sugar is processed from raw sugar, which goes through a more stringent refining, filtering and cleaning process compared to GKP (Fajrin et al., 2016). The purity level of refined sugar is also higher, the crystalline granules are finer, and the color is whiter with a whitish content of refined sugar (ICUMSA) 45. The content in refined sugar is mostly sucrose, where sucrose tends not to taste too sweet. Refined sugar is usually used for industry only.
The difference from refined sugar, white crystal sugar tends to have a color not as white as refined sugar. White crystal sugar (GKP) is sugar derived from pure sugar cane with a higher ICUMSA level compared to refined sugar, namely 200-300 IU. The color that arises from white sugar itself comes from free glucose / fructose, where white sugar has a sweeter taste than refined sugar. This is also due to the content of white crystalline sugar which contains glucose. White crystal sugar tends to have a coarser texture than refined sugar. GKP can be consumed directly without having to be processed like refined sugar. Apart from that, the crystal grain is a bit coarse.
Based on a customer value-driven marketing strategy, on the market segmentation side, farmers use GKP demographic segmentation in the market in Indonesia. Meanwhile, GKR has a very broad demographic segmentation, not only in the Indonesian market but worldwide. Based on the target, GKP is targeted at all production absorbed in the Indonesian sugar market and focuses on the government regulation that GKP is for consumers, not food and beverage industry companies. Meanwhile, GKR focuses on the food and beverage industry in Indonesia.
